RUAR Street Burger restaurant is expanding their menu, adding three new burgers which they presented to the press in Barcelona. 

The restaurant opened in 2021 in Barcelona, immediately gaining popularity

"One day when we opened there was a huge line of people waiting, I had to tell them that it would take three hours before they could eat but they still waited. I didn't expect it, it was crazy," CEO and chef Fabio Souza answered when asked about the success of his restaurant.

The hamburger restaurant won the 'Best Burger in Barcelona 2022' prize with their 'La Trufada' burger, containing two burgers, cheese, an egg, black truffle mayonnaise and buns made from potatoes. 

"We keep cooking the burger that won us that prize, 'La Trufada', but we also have a lot of confidence in our new burgers," Souza commented. 

One of the other burgers, 'Fat COW 2.0', requires them to cook the meat for 18 hours

Ecologic and natural ingredients 

"The only things that aren't handmade are ketchup and mustard" Souza said. Using ecological products is important for the chef. 

"We wanted to do it another way by using ecological products without preservatives. The meat we use is pasture-raised, not from a large-scale farm. Besides giving us the best quality and taste, it is also better for the planet," he explained. 

 

The main kitchen, where all the ingredients are prepared is located in Hospitalet de Llobregat, next to the Catalan capital, but the hamburgers are made on-site within the restaurant. 

Becoming a franchise 

The CEO is currently preparing to open his second RUAR restaurant, in Madrid, and looking to expand further to make RUAR a franchise.

"At the end of the month we open an establishment in Madrid and we're in discussion for three other establishments, but the goal for this year is to have five restaurants," the chef said.
